Hot, sweet red-candy cinnamon, harsher than Ceylon bark.

What it is: Natural oil from leaves, twigs and bark of Cinnamomum cassia.
Where it comes from: China, Vietnam
When you smell it: Heart: the first hours.
What perfumers do with it: Cheap, powerful cinnamon for spicy orientals and functional perfumery.
Worth knowing: Most cinnamon sold in American supermarkets is actually cassia.
Rules: Limited. Limited through cinnamaldehyde and coumarin content (IFRA).
