Caramel and burnt sugar when strong, ripe strawberry jam when diluted.

What it is: A molecule made in a lab.
Where it comes from: nature-identical, found in strawberry and pineapple
When you smell it: Heart: the first hours.
What perfumers do with it: Adds cooked-fruit, jammy caramel warmth to strawberry, pineapple and praline accords.
Worth knowing: First reported in 1960 as a sugar-browning product; found in pineapple in 1965 and later in strawberries.
Rules: Limited. IFRA use limits since 2020 (skin sensitisation).
Also called: Strawberry furanone; 4-hydroxy-2,5-dimethyl-3(2H)-furanone; HDMF
